Mycotoxins can contaminate a wide variety of foods and are a result of fungal infections in crop plants and plant products during growth or storage. Although more than 300 mycotoxins have been identified, producing a wide range of acute and chronic toxic effects, relatively few are considered to be significant as contaminants. The latter group includes aflatoxins, deoxynivalenol (DON), fumonisins, ochratoxin A and zearalenone. Aflatoxin B1, the most toxic mycotoxin, is a carcinogen.
